The setup instructions say there will be a Printer Setup Utility available. I can't find it in my applications.

This instruction is for the previous version of OS X, 10.4 (Tiger).
I went to system preferences and printers.

That's correct. This is how you add your printer on Leopard 10.5.
When I click the Add printer there, the 'Add' option does not show up, only 'cancel'.

With the Print & Fax pane displayed, you click the ' + ' button which is the 'Add'. Then select the Default icon in the new pane. This should show the iP1800 as a USB device. Click on this and the Print Using menu should change to Canon IJ Printer. Once this occurs click the Add button to finish the setup.

The iP1800 driver is included with Leopard, so I would say that it is meant to be usable under Leopard. At this stage I don't believe it is the driver at fault, as this would not stop the iP1800 appearing in the Default browser view.
